Spring is almost here, right? Surely it’s only a few short weeks away, anyways! The impending change in season inspired me to make a salad that I usually make in the heat of the summer! I’ve been reading alot of recipe books lately and when I was flipping pages, I knew that I wanted to make this one as soon as possible, and today was the day!
This recipe comes from Dana Schultz’s Minimalist Baker, Everyday Cooking cookbook. I’ve had this one since it was released, and have used many recipes from it. They are all delicious. I really like her easy to read instructions and none of the ingredients are too crazy. Right now at this stage of the game that I am in, I use a recipe for most every meal!! I’m looking forward to the day where it’s a little more intuitive.
For the base of the salad, I quickly peeled & cut up the beets, made them quite small so that it wouldn’t take so long to cook. I covered them with a bit of olive oil, salt & pepper and popped them in the oven for 15 minutes @ 350. Then I placed the walnuts on the other side of the pan and set the timer for another 10 minutes. Turns out that was too long, and I had to re-do another batch for only 7 minutes – they were then nice and golden and smelled delicious!
While that was in the oven, I made the dressing out of 1/4 cup tahini, the juice of one lemon, some hot water to thin the mixture and a very small amount of maple syrup.
When the nuts were done, I plated the beets, the orange pieces, added the walnuts and drizzled the dressing & voila – it was done! A super quick meal, that was easy to make and tasted wonderful. I’ll have the leftovers for dinner tonight as a side with some chicken.
Well here it is! My first official post about food! The most fun part of this process is taking the pictures for me and obviously eating the delicious creation. Clean up is where I struggle the most, but this was really easy – into the dishwasher it all went.

- 2 oranges, cut into quarters
- 1/2 cup walnuts
- 3 beets, peeled & chopped into halves
- olive oil, salt & pepper
- 1/4 tahini
- 1 lemon, juiced
- hot water, to thin paste
- maple syrup, to taste
